All ecosystem deliverables are contractual. Specific cadences per tier are listed in the comparison table above and in your Member Agreement. We track delivery quarterly. If we miss a quarterly delivery, we make it up the next quarter or credit your fee.

We know choosing a commissary is a big commitment. Before you apply, come cook here. Twice a week we host free 4-hour sessions where prospective members work in the kitchen alongside our Membership Manager. Bring your ingredients, make your product, get a feel for the space.

No pressure, no pitch. If it’s a fit, you’ll know. If it’s not, you’ll know that too — and we’ll send you off with a list of other Newark options that might be right for you.

Frequently Asked Questions

How long is my commitment?
Bridge maxes at 6 months. Starter has a 6-month minimum. Builder, Operator, and Pro have 12-month minimums. After your minimum term, your membership continues month-to-month and can be cancelled with 30 days’ notice.
What if I need to pause my membership?
Every paid-tier member can pause for up to 60 days per calendar year. During pause: no monthly fee, your storage is held for $50/month, your term clock pauses. Give 14 days’ notice to reactivate.
What happens if I go over my included hours?
You’re charged the overage rate for your tier: Starter $25/hr, Builder $22/hr, Operator $20/hr, Pro $18/hr. If you’re regularly going over, that usually means you’re ready to upgrade.
Can I upgrade between tiers?
Upgrade anytime with a prorated billing adjustment. Downgrade only at the end of your current term with 30 days’ notice.
What’s the security deposit?
One month’s membership fee, refundable when you end your membership in good standing. Collected at signing along with your first month’s fee.
Do I need my own insurance and licenses?
Yes. You’ll need: your own Retail Food Establishment license (or applicable permit), Certified Food Protection Manager certification, food handler cards for your staff, and $1M general liability insurance naming Newark Food Factory as additional insured. We help you navigate it all during onboarding.
Are the ecosystem benefits actually guaranteed?
The quarterly deliverables listed for each tier are contractual — we commit to deliver them on schedule. If we miss a quarterly delivery, we make it up next quarter or credit your fee. Business outcomes (revenue, customers, sales) are never guaranteed — those depend on your work. We open doors. You walk through them.
What does the 90-Day First Customer Promise actually guarantee?
If you’re a new Builder, Operator, or Pro member and we haven’t delivered both (1) your first warm IITNJ catering introduction and (2) your first marketplace feature within your first 90 days, we credit one month’s fee. The promise is that we’ll create the opportunity. We don’t promise the prospect will buy.
Can I bring my employees to work in the kitchen?
Yes, with proper documentation. Each employee must have a current food handler card. They access the kitchen under your membership credentials, and you’re responsible for their conduct and compliance.
How do bookings work?
All kitchen use is booked through our member portal. Your tier determines how far in advance you can book (14 days for Starter, up to 45 days for Pro). Minimum 2 hours per booking, maximum 8. Cancel 24+ hours ahead for no penalty.
What about IITNJ students in the kitchen?
IITNJ Work-Based Learning students rotate through the kitchen as part of their education. They’re not your employees and you don’t direct their work. They’re supervised by NFF and IITNJ staff. The student presence is part of NFF’s mission as a workforce education partner.
What’s the difference between Builder and Operator?
Builder is built for businesses launching or in their first year of consistent revenue — 40 hours/month is enough for most early operations. Operator is built for businesses that have outgrown 40 hours — established food trucks, scaling caterers, working CPG makers. You’ll know it’s time to upgrade when you’re consistently using 50+ hours and growing.
Can I tour without applying?
Absolutely. Tours are free with no commitment. Many of our members tour two or three times before deciding. We’d rather you take the time to be sure.
